Cover crops are typically planted between rows in the vineyard to replenish soil nutrients, prevent erosion and help retain moisture in the ground that would otherwise be lost to evaporation.
During the growing season, cover crops may be cut back or removed so they don't compete with the vines for water and nutrients.
Depending on the plant type used, cover crops provide different benefits. Grasses provide a low-cost means to prevent erosion on hillside and sloped vineyard locations. Legumes, like clover, are ideal for sites that are nitrogen deficient.
