Sauvignon Blanc is the white grape of Bordeaux, but is best known for the crisp wines it produces from the Loire and New Zealand. Sauvignon Blanc is also called Fumé Blanc in the United States. This varietal grows vigorously and is considered at its best when planted in cool climates. Sauvignon Blanc is noted for its aromas of grass and gooseberries along with an occasional hint of cat pee. Warmer climates can allow Sauvignon Blanc to develop more tropic fruit characters. Sauvignon Blanc produces small compact clusters with medium sized green berries and ripens early to mid-season. It can be susceptible to botrytis growth making it a favorite grape of the dessert wine producers in Sauternes. It typically produces a light and crisp wine intended to be served cold and young. Sauvignon Blanc shares half the parentage of Cabernet Sauvignon along with Cabernet Franc.
