Elevage

Elevage

From Enowiki, the free online winemaking encyclopedia

Elevage is a French term referring to the “rearing” of a wine from the beginning of fermentation through bottling. During the fermentation and aging periods, winemakers make many decisions that help shape the wine’s quality, character and overall style. The common association is that of a parent or teacher who guides a child into maturity by providing care and an enriched environment.
